Chicken with Cornelio

Ingredients
- 1 jointed chicken
- 3 mixed red and yellow Cornelios
- 3 well-ripe tomatoes
- 2 garlic cloves
- 1/2 glass white wine
- extra virgin olive oil
- salt and pepper
Preparation
Wash the Cornelios, remove the stems and the seeds, then cut them into strips. Wash the tomatoes, dry them and chop them into small pieces. In a high-sided pan, heat the oil with the garlic, then add the washed and dried pieces of chicken and brown them for a few minutes. Add a splash of white wine, then put in the Cornelios and tomatoes along with salt and pepper to taste. Cook the chicken over a moderate heat, with the lid on, for around 45 minutes, taking the lid off for the last few minutes. Serve the chicken in the sauce and if desired with a few slices of warm bread.
